A fruit salad is definitely my kind of salad! When I was plating the fruit for this photo shoot, I thought for a fun change, why don’t I play with my food and make a design. One of the best parts about fruit (besides the appreciated sweetness) is the color. Originally intending to create something reminiscent of a flower, my fruit sculpture reminded of a brightly colored Tiki design in the end. How perfect for pool parties during the summer!
My favorite friend and realtor, Jill, gave me this recipe for a simple mint dressing, and now I don’t make a fruit salad without it!
1/2 cup Raspberries
1/2 cup Kiwi, sliced
1/2 Pineapple, sliced thinly
1/2 cup Blueberries
**for the dressing:
10 large mint leaves
1 TSP sugar
1.) If making a design, arrange fruit into preferred pattern. Be sure to begin with flat sliced pieces as the base, and leave round fruit, such as blueberries or raspberries for the top. If not making a design, combine fruit together in a large bowl. Set aside.
2.) In a food processor fitted with small bowl and blade, combine mint and sugar and chop until mint is finely minced. Drizzle over bowl of fruit and toss well. If serving a Tiki Fruit Salad, either drizzle sparingly on top of design or serve on the side of the plate for dipping.
