For those of you who received our Summer magazine, you will have read a section called “Texas Road Trip” where we outlined a few of our favorite stops across Texas, one of them being South Padre Island. My family spends a lot of time on the island, and one of our favorite spots mentioned in the magazine is Joe’s Oyster Bar and Seafood Market located in Port Isabel, just across the Queen Isabella Causeway. Every visit to #SPI promises a visit to Joe’s especially for their fresh Gulf crab fingers.
At some point during each trip to the island, my mother can be found at the stove sautéing the crab fingers in butter, garlic and a little white wine. I like to think of the finished flavors as Texas Gulf meets the Mediterranean.
3 garlic cloves, minced
6 small green onions, chopped
1 stick butter
1 pint of Crab Claws
1 cup white wine
1 heaping TBS of Herbs de Provence
- Sauté garlic and green onions in butter until just soft
- add crab claws and sauté for 3 minutes
- add white wine and herbs and cook until liquid is reduced by half
- serve immediately with a small bowl to collect claws
