While trolling through Pinterest the other night, I came across a picture of fruit salad served in waffle cones to look like cornucopias. What a neat idea for Thanksgiving Brunch! And then pairing it with a fantastic Fall-flavored yogurt dressing from kitchentreaty.com…mind blown. Enjoy this light addition to your meal, and include any fruits your crew prefers. Recipe serves 6 adults.
Ingredients for fruit salad:
1 large honey crisp apple, chopped into 1/2″ cubes
1 large bartlett pear, chopped into 1/2 ” cubes
1 cup blackberries
1 cup raspberries
1/2 cup pomegranate seeds
chopped pecans for additional crunch, optional
a few bay leaves for garnish
*toss well with Fall Fruit Dressing (recipe below)
ingredients for Fall Fruit Dressing:
1/3 cup honey flavored Greek yogurt, I use Greek Gods
2 tsp freshly grated lemon zest
1 TBSP fresh lemon juice
2 TBSP maple syrup
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp ground nutmeg
*Combine all ingredients in a small bowl and mix well. Keep refrigerated until ready to toss with fruit salad.
After tossing fruit with dressing, scoop spoonfuls of salad into waffle cones to make mini fruit cornucopias. This makes a beautiful and colorful addition to your Thanksgiving table.
