Good morning McKinney!
Greetings from South Padre Island. We arrived here on Monday with kids in tow and have been enjoying the sand and salty air in our favorite Texas coast town. Our flight left on Monday morning at 6 AM which required a 2:45 AM wake-up call. It sounds brutal (and it was!) but we made it to the island by 10:30 that morning giving us a full day to enjoy instead of cutting it in half with travel. Anytime we travel I always like to take the earliest flight out possible.
On Monday night we resurrected an old favorite from the TAOLB archives and made Thai Chicken Satay, one of the very first recipes I ever published on The Art of Living Beautifully. FUN FACT: The Art of Living Beautifully and this recipe were actually featured on the Kptn Cook App in the Spring of 2016! It was absolutely delicious as usual, and even though we baked it instead of grilling it on skewers, the flavor was amazing and even good for one of the kiddos who is Gluten-Free and must have a low sodium diet.
We;ve been at the beach, the pool, and of course already visited a few of our favorite restaurants: Wanna Wanna has the best fried shrimp and turbo pina coladas! and Sea Ranch has a beautiful view of all the mini-yachts in the marina. Today we are taking the kids to Parrot Eyes to ride one of those 6-person water bananas as a surprise.
My girlfriends Jill and Laura gave me an early birthday present a Brutmate wine carafe and matching glasses. I am probably the last person on the planet to have one of these, but I am so excited! Pour a bottle of chilled wine in the carafe and it will keep it cold for hours! The wine glasses have lids that close which is great for keeping out the sand. So far our trip is off to a great start!!
