farmers market salad

So I’ve mentioned before I don’t particularly like salad…or lettuce in general…or when people claim to LOVE salad or lettuce…however when I shop at a Farmer’s Market, it makes the thought of eating a fresh salad much less tasteless, and much more exciting. Enjoying leafy greens and vegetables Farm-to-Table style is definitely the way to go.

Do you ever visit your local Farmer’s Market? We have one here in McKinney thats open from April to September, and I always get excited about attending this time of year. The recipe below contains ingredients I enjoy eating, but you can substitute any of your favorites should you not enjoy these. And how clever will everyone think you are when you serve them in berry baskets? I found these at Hobby Lobby and lined them with parchment paper to hold the salad. Also try these melamine berry baskets from World Market.



4 cups greens *I do one cup per person eating

1/2 cup Heirloom Cherry Tomatoes, cut in half or left whole depending on their size

1/4 cup Sliced Radishes

1/2 cup Carrots, shredded

1/4 cup Goat Cheese

1 1/2 TBS Olive Oil

3/4 TBS Lemon Juice

Salt and Pepper to taste


1.) In a small bowl, whisk together olive oil, lemon juice, salt and pepper. Set aside.

2.) Combine first five ingredients in a large bowl.

3.) Drizzle olive oil mixture over salad and toss to coat.
