Roasted Vegetable Salad

Hello and happy Monday to all of you. This recipe is dedicated to all of my fellow salad-hating friends out there. ¬†Salad ingredients are there…dull salad dirt-like flavor is not.

1 orange bell pepper, chopped

1 yellow bell pepper, chopped

1 cup of cherry tomatoes, cut in half

spinach…approximately 10 oz or so

olive oil

1 1/2 TBSP Herbs de Provence

Salt and Pepper to taste


1.) Wash and dry spinach and pour in a large salad bowl. ( I love this one)

2.) Heat approximately 2 TBS olive oil in a medium-sized skillet over medium heat. Add peppers, tomatoes, salt, pepper and herbs and sautè until tomatoes are soft and blistering.

3.) Pour hot vegetable mixture over spinach and toss well. *add a bit more olive oil if needed to “dress” the salad.
