You know I typically don’t love salad, but this salad is special. It calls for Arugula which has a distinct, peppery flavor. And the combination of blueberries, lemon and goat cheese create a tangy accent that makes this salad more than bearable…you’ll definitely head back for seconds!
Ingredients:
4 cups Arugula–(you can also find an Arugula/Spinach mix at Trader Joe’s that is fantastic in this recipe.)
1 cup Blueberries
3/4 cup Goat Cheese
1 TBS lemon zest
4 TBS Extra Virgin Olive Oil
1 TBS lemon juice
salt and pepper
Directions:
1.) In small bowl combine lemon zest, olive oil, lemon juice, salt and pepper and whisk until combined.
2.) Combine greens and goat cheese in a large bowl and pour lemon/oil mixture on top. Toss well with hands.
*I always use my hands to mix salad. It makes it easier to tell when everything is well coated with dressing.
