Summer is almost upon us and I am in an island state of mind.  Nothing makes me think of salt air and the sound of waves crashing quite like the tropical flavor combination of pineapple and coconut.  Simply shake ingredients with ice and Pineapple Coconut Martini will transport you to paradise. It’s like a vacation to the beach in a glass!

Pineapple Coconut Martini

2 ounces coconut vodka, I used Veil brand

3 ounces pineapple juice

1 tablespoon coconut milk



1 teaspoon toasted coconut

Few drops honey

1 wedge pineapple

To garnish the martini glass, moisten the rim with honey; next sprinkle coconut over the rim, the honey will cause the coconut to stick.  To prepare the martini, add vodka, juice, coconut milk and ice to a cocktail shaker.  Shake vigorously.  Strain cocktail into the prepared glass and add a pineapple wedge to the glass rim.
