Long time no blog.
Wanted to share a little fantastic meal discovery with you that my family CONSUMED in record time on Tuesday night. The fact that this soup came from a mix purchased at trades-day shouldn’t deter me from making it should it…I mean, whats the big deal?
I met my cousin and her daughter in Canton, Tx back in June and the three of us spent the day perusing through stalls of junky treasures and newly discovered homemade necessities, All of Us Old Plantation Soups being one of them. Crockpot after crockpot lined the edges of this open air “boutique”, and delicious combinations of hearty flavors filled the air of the walkway and surrounding stalls. Needless to stay we stopped in.
I brought home with me two different soups: Cheesy Chicken Enchilada and Steak Soup. *Note: Steak Soup is not on their website, but Steak Noodle Soup is. 🙂
Cheesy Chicken Enchilada was on the menu this week, and it was everything I remembered from the little paper cup sample I consumed months ago. The package says to add water, shredded chicken, a can of diced tomatoes and evaporated milk for creaminess.
For kicks, I sautéed an onion with one orange and one yellow bell pepper and added it to the soup along with two cans of black beans, drained.
Truly, truly delicious! It made a ton, so I sent some home with Sadie and froze the rest for an easy dinner in the weeks to come.
Garnish with shredded cheese, sour cream or even some tortilla chips.
