You probably have a go-to breakfast casserole. Most of do. Until now I have had one too; one that my mother made for bridal showers and graduation brunches my whole life.
This new recipe honestly came from nowhere. I needed to take something “breakfast-y” to Bible Study…so I just made this one up. Most of the time we have these ingredients already in the fridge. This is delicious and pretty easy, especially if you take my kitchen advice below.

* If you don’t feel like standing over a hot skillet to fry 18 sausage patties and 20 strips of bacon, I recommend purchasing the ready-cooked version of both. I take this method all the time because frying makes such a mess. My favorite culinary goddess Ina Garten cooks her bacon in the oven, which is an excellent idea, but even that at times seems like too much work.
*definitely use the Flakey Layer Grands Biscuits. These become the crust of the casserole, but using the entire biscuit makes the bottom overly thick. Its not too difficult to separate each biscuit into 3 layers prior to baking.
5 Flakey Layer Grands Biscuits (literally 5 biscuits, not 5 cans of biscuits)
18 sausage patties, cooked
1 pound shredded frozen hashbrowns
2 cups colby jack cheese, shredded
20 strips of bacon, chopped
Salt and Pepper
Half a stick of butter, melted
1.) Preheat the oven to 350º.
2.) In a medium bowl crack all 8 eggs and whisk until well scrambled. Set aside.
3.) Spray a 9×13 Pyrex with non-stick spray. Line the bottom of the baking dish with the separated biscuits which will make the first layer of Breakfast Lasagna.
4.) Create the second layer by covering the biscuits with a layer of sausage patties. If needed, cut some of the patties in half to fill in corners and empty spaces.
5.) Pour raw eggs over sausage and biscuits for the third layer. Add salt and pepper.
6.) Pour hash browns on top of first three layers, covering completely. Pour melted butter on top and add more salt and pepper.
7.) Bake uncovered for 35 minutes. Remove from oven and cover hashbrowns with cheese and top with bacon. Return to oven and cook 20 minutes more.
8.) Remove from oven and serve immediately.
